Ingredients
Method
- Rub the cold rice between damp fingers until no clumps remain.
- Coat the chicken with the marinade ingredients and leave it 10 minutes.
- Stir the light soy, dark soy, sugar and remaining pepper together for the sauce.
- Heat the wok or skillet over high heat for 2 minutes.
- Sear the chicken in 1 tbsp oil for about 4 minutes, until the biggest piece reads 165°F (74°C). Move it to a plate.
- Scramble the eggs in 1 tbsp oil for about 40 seconds, while the center is still glossy. Add them to the plate.
- Cook the onion whites and ginger in 1 tbsp oil for 20 seconds. Add the garlic for the last 10 seconds, then the peas and carrots for 60 seconds.
- Tip the rice into the last 1 tbsp oil and turn it every 15 seconds for about 3 minutes, until the hiss thins to a light patter.
- Pour the sauce onto the bare pan around the rice and fold for 20 to 30 seconds.
- Return the chicken and eggs with the onion greens and fold for 45 to 60 seconds.
- Off the heat, drizzle in the sesame oil and fold once more. Serve hot.
