Ingredients
Method
- Stir the yeast and honey into the warm water until it clouds.
- Add the oil, then the flour and salt, and mix on low for 2 minutes.
- Cover and leave for 10 minutes.
- Knead 8 minutes by mixer or 12 by hand, until it passes the windowpane test.
- Tape the container at the dough's height and let it rise 40 minutes to half again.
- Cut two 435 g pieces and tighten each into a ball.
- For tonight, cover the balls for 40 minutes and heat the oven to 500°F (260°C) with the steel inside. For later, refrigerate them in oiled containers.
- Stretch each ball to 12 inches with a 1 inch rim.
- Spread 1/2 cup sauce, add 4 ounces of cheese, and slide onto the steel.
- Bake 8 to 10 minutes until the rim is amber and blistered, then rest 2 minutes on a rack.
Notes
The 2 hours 15 minutes includes an 80 minute rise and a 10 minute rest.
All purpose flour works with 300 ml of water instead of 325 ml.
Weigh the flour if you can, since a scooped cup can run 30 g heavy.
Storage Notes:
Refrigerate balls at the tape line in oiled, lidded containers for up to 72 hours.
Freeze balls at the same point for up to 3 months and thaw them overnight in the fridge.
Reheat baked slices in a covered skillet over medium heat for about 3 minutes.
